½ c. (1 stick) butter
1 tsp. white pepper
2 lbs. potatoes, peeled
and cut into quarters
1 c. fresh parsley, finely chopped
½ c. milk
Blanch the unpeeled garlic cloves in boiling water for three minutes. Drain the hot water, pour cold water over the cloves, then peel off the skins. Smash each garlic clove with the flat side of a large kitchen knife. Melt the butter in a small saucepan and add the smashed garlic, then simmer on low heat for 20 minutes. Fill a large stockpot with water and bring to a boil, then add the potatoes and cook for 20 minutes until the potatoes are tender. Drain off the water. Add the garlic/butter mixture, milk, salt, and white pepper to the potatoes and mash well. Add the parsley and serve immediately. Makes 6 to 8 servings.
Lemon Balm Stuffing with Fruit and Walnuts
Using vegetable broth in place of the chicken broth in this recipe makes it suitable for vegetarians.
